Sugar Free Apple and Banana Muffins

Ingredients

12 portion(s)

Muffins

  • 3 apples, Save 1 for decoration
  • 1 banana, Quartered
  • 50 grams olive oil
  • 2 eggs
  • 20g Maple syrup
  • 1 level teaspoon vanilla extract
  • 300 grams SR flour
  • 1 heaped teaspoons cinnamon
  • 1/4 level teaspoon baking powder

Recipe's preparation

  1. Preheat oven 180. Line muffin tray with greased paper cases.

    Quarter 2 apples and place in bowl with banana. Turbo x4 until finely chopped.

  2. Add Oil, Eggs, Maple Syrup and Vanilla. Combine 5secs/Sp 3.

  3. Add flour, Cinnamon and baking powder. Mix 10secs/Sp 4. Scrape down sides. Mix 10 secs/Sp 4

  4. Divide mixture between 12 Lg muffin cases or 18 Sml muffin cases. Bake for approx. 25mins or until a skewer comes out clean.

Tip

These are not an overly sweet muffin and are perfect for the school lunchbox.

If you plan to freeze these, perhaps omit the apple decoration on top, not sure how well they'll defrost.

    These are great thank you, I added one Apple, one banana, some dates and a splash of milk as it was a bit thick!! My 18month old loves them

    My kids love the taste of these.  I did add 100ml of rice milk as the batter was very thick.  I also added a frozen blueberry or raspberry in the middle of each muffin.  Simple and yummy.  Thanks.

    tmrc_emoticons.) thanks for this sugar free alternative. The mixture was very thick; wasn't sure if it was meant to be? Next time I will add an extra banana for moisture as mine came out dry-ish. I didn't use the apple on top but covered lightly in icing sugar.
