Sweet Potato (Kumera) Pie

Ingredients

Pastry

  • 200 g plain flour
  • 100 g Butter, chilled, roughly chopped
  • 1/4 tsp salt
  • 50 g water, chilled

Filling

  • 650 g Sweet Potato (Kumera), Chopped 2cm cubes
  • 3 eggs, separated
  • 30 g Butter, roughly chopped
  • 1/2 tsp grated nutmeg
  • 1/2 tsp ground ginger
  • 6 tsp plain flour
  • 60 g buttermilk
  • 1/2 lemon, Juice of
  • 100 g sugar

Recipe's preparation

    Make Pastry
  1. Pre heat oven to 180C.

    Mix Flour, Butter and salt for 10sec/speed6.

    Add chilled water and knead 20sec/Closed lid/Dough mode

    Transfer dough onto ThermoMat and knead into a tight ball. Wrap and place in fridge for at least 15mins.

    Roll out on ThermoMat so enough to line 22-25cm pie dish. Press into base of pie dish. Prick base with fork and blind bake (line with baking paper cover with beans) for 15mins.  Set pastry aside to cool and continue with making filling.

  3. Steam the sweet potato for 15-20 mins until tender.

    Beat egg yolks with sugar 30sec /Speed 6 until smooth and creamy (set aside but do no clean bowl)

    Mash together sweet potato, butter, lemon, nutmeg, and ginger 10sec/ Speed 5.

    Add the yolk mixture and mix 5 sec / speed 5.

    Add flour and buttermilk and mix 5 sec/speed 5.

    In a second clean bowl insert butterfly beat the egg whites  3mins / speed 4 until stiff.

    Fold the egg whites into the Sweet Potato mix 5 sec / Speed 5 or you can do this step by hand.

    Spoon mixture into the pastry case and bake in the pre heated oven 180C for 40 mins until set in centre.

     

    Allow to cool in dish before removing.

     

    Serve with cream or natural yoghurt.

Tip

Leave the egg whites at room temperate before using which will make them easier to whip.

You can make your own buttermilk by adding 1 tbsp of vinegar to a cup of milk and leaving for 30mins.
