Ingredients

Swiss Roll Sponge

  • 4 --- large eggs, (room temperature)
  • 90 gram white sugar
  • 1/2 tsp vanilla extract
  • 150 grams cornflour
  • 1/2 tsp bicarbonate of soda
  • 1 tsp cream of tartar

Recipe's preparation

  1. Preheat oven to 170C.
    Line a Swiss Roll tray/pan with baking paper.
    My tray size I use is roughly 30x24.5x1.5 cms.

    Sift dry ingredients twice, using a sifter/strainer or place in Thermomix bowl and blitz 10 seconds/speed 5.
    Place flour mix into a medium size mixing bowl.

    Thoroughly clean and dry mixing bowl.

    Mill white sugar for 10 seconds. Leave sugar in bowl.

    Place butterfly whisk into Thermomix bowl, making sure it is secure over blades.

    Add eggs and vanilla to sugar. Beat 8 minutes/speed 4./MC off.

    Pour egg mixture over reserved sifted flour. Using a large metal spoon, gently fold egg and flour together, until flour is just incorporated. Do not beat or over mix, or sponge will not be fluffy.

    Pour into lined tray and bake for 12-15 minutes or until sponge springs back when touched gently.

    Turn out onto clean tea towel and then roll up from end to end and leave to cool.

    Once roll is cold, carefully unroll as much as possible, then fill with your desired filling.

Tip

Check your oven manual. Your oven may require different temperature and cooking times to my oven. Over cooked sponge will be very dry, plus likely to crack.

During winter, add eggs and vanilla to sugar. Beat 3 minutes/37degrees/speed 4/MC off, then beat 5 minutes/speed 4/MC off. (no temperature for last 5 mins). This will help gain more volume, when eggs are cold.

Gluten Free cornflour could be used, but it will result in a heavier sponge. I used "Nurses" cornflour (wheat) for this recipe.
