Thermilane (healthier) banana muffins

  • 3 ripe bananas, in pieces
  • 125 grams Butter, soft
  • 150 grams Coconut sugar
  • 3 eggs
  • 150 grams Flour, Plain
  • 130 grams flour, wholemeal
  • 2 tsp baking powder
  • .25 tsp bicarbonate of soda
  • .25 tsp salt
  • 30 grams Milk
  • 1 tsp vanilla essence

Recipe's preparation

  1. Preheat oven to 180°C. Line a 12-hole muffin tray with muffin liners and set aside.

  2. Into Thermomix bowl place 3 ripe bananas. Mix 5sec/speed 6.

  3. Add butter and coconut sugar. Mix 20sec/speed 4.

  4. Scrape down sides of bowl and add 3 eggs. Mix 10sec/speed 4

  5. Add flour, wholemeal flour, baking soda, salt, baking powder, milk and vanilla essence. Mix 20 sec/speed 4.

  6. Pour batter into prepared muffin moulds until about 3/4 full and bake for 20-25 minutes until a thin skewer inserted in the centre of the muffin comes out clean. Allow to cool in tin for 5 minutes, then transfer to a wire rack to cool completely (if you can wait that long). Repeat with remaining batter.


Perfect for lunchboxes and also delicious served warm with a bit of butter.
