Soft Gluten Free Banana Cake
- 125 g Butter, cold, cubed
- 100 g raw sugar
- 3 eggs, small
- 3 ripe bananas, large or 5 small
- 240 g Gluten free plain flour, Cookidoo recipe
- 1 tsp Baking Powder, gluten free
- 1 tsp ground cinnamon
- 1 tsp bicarbonate of soda
- 1/2 tsp mixed spice
- 1/2 tsp ground cardamom
- 2 tbsp Milk
- 1 tbsp lime juice

Recipe is created for

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Preheat oven to 160C FF.
Grease and line a square cake tin.
Sift dry ingredients together.
Add sugar to bowl and blend 5 sec/sp 6.
Add butter and cream 10 sec/sp 5.
Scrape down, add one egg and repeat.
Add remaining eggs, and chopped banana.
Mix 20 sec/sp 5.
Scrape down.
Add sifted dry ingredients and milk/juice mixture.
Blend together 10 - 20 seconds/sp 4 until well mixed.
Bake 35 to 40 minutes.
Leave in tin for 10 minutes before turning out.
