Ingredients

Thermojonz's Belgian Biscuits

  • 120 g Butter, softened
  • 100 g brown sugar
  • 1 --- egg
  • 250 g flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 tsp mixed spice

Icing & Filling

  • 100 g icing sugar
  • 2 tablespoons Boiling water
  • jelly dessert powder, sweetened, strawberry flavour
  • raspberry jam

Recipe's preparation

    Biscuits
  1. Weight butter and sugar into mixing bowl, then mix 1min/speed 3.
  2. Add egg and mix 30 sec/speed 3.
  3. Add 250g flour, 1 tsp baking powder, 1 tsp ground cinnamon, 1 tsp ground ginger, 1 tsp mixed spice.
    Knead Dough 1 min.
  4. Press dough together into a ball.
    Roll dough out on a lightly floured baking mat to about 5mm thick.
    Working quickly, use a 4-5cm round cookie cutter to cut out circles (make sure you have an even number). Carefully transfer to lined baking trays.
  5. Bake at 180 for 10 minutes, until browned.
    Leave on trays for a couple of minutes, then transfer to a wire rack to cool completely.
  6. Icing and Filling
  7. Weigh icing sugar into mixing bowl. Add 2 tablespoons of boiling water and mix 30 sec/speed 3.
  8. Spread icing onto half of the biscuits and sprinkle jelly crystals on top.
    Sandwich biscuits (un-iced on the bottom, iced on top) together with jam.

Tip

If you have time between steps 3 and 4, you could wrap your ball of dough in gladwrap and refrigerate for 30 min to make your dough more firm.
