Toll House Cookies

Ingredients

Cookie Dough

  • 250 grams Butter
  • 90 grams brown sugar
  • 90 grams caster sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1/2 teaspoon Bi Carb Soda
  • 1/4 teaspoon salt
  • 330 grams plain flour
  • 250 grams dark chocolate bits, (Nestle choc bits are best!)
  • 65 grams pecans

Recipe's preparation

  1. Preheat oven to 180 degrees (Fan forced)

     

    Put pecans into the Thermomix bowl and chop for 1-2 seconds Speed 4 or until desired consistancy (I prefer them quite chunky).

     

    Remove pecans from bowl and put aside.

     

    Without cleaning bowl add butter, brown sugar, caster sugar and vanilla extract. Cream togather on speed 3 for 1 minute or until light in coulour and texture. If your butter is cold it might take a little longer to reach this consistancy.

     

    Scrape down the sides of the bowl, and add one of the eggs. Turn Thermomix on speed 2 and after about 10 seconds add the second egg through the hole in the lid without turning the Thermomix off. 

     

    While the Thermomix is continuing at speed 2, start slowly adding the flour, bi carb soda and salt (about 1/2 cup every 20 seconds). Once all of the flour has been combined (Shouldn't take more than 2 mins) stop the Thermomix and add the pecans and choc chips. 

     

    Once chocolate chips and pecans have been added, turn on to speed 2 for 1 minute to combine.

     

    Spoon teaspoon sized balls of mixture onto Oven Thermomat or baking paper about 3 cm apart and bake for 10-12 minutes or until golden brown.

     

    Leave to cool slightly (If you can) then place in air tight container to store. These are good in an airtight container for a week, however they dont last this long in my house!

Tip

You can use Vanilla Essence but you will need to increase the amount. Also Vanilla Bean Paste is good to use also.

The Nestle brand choc chips are the best as they hold their shape. The traditional recipe uses 100gms of choc chips but we prefer them really over loaded!

    I have been making these for years, not in my thermie but will do so from now on. I add about 3/4 cup of sultanas, use almonds instead of pecans. They are very moorish !

    Love my thermomix!
