Triple Chocolate Muffins
- 180 grams raw sugar
- 150 grams Butter
- 370 gram buttermilk
- 2 eggs
- 310 grams Self Raising Flour
- 40 grams cocoa powder
- 1/2 teaspoon bicarbonate of soda
- 100 grams dark chocolate chips
- 100 grams White Chocolate Chips

Recipe's preparation
Preheat oven to 200 degrees c. Place 18-24 paper cases in muffin tins
Mill the sugar for 4 seconds on speed 9. Set aside
Add the butter and melt for 3 minutes, 60 degrees, speed 2
Add all the remaining ingredients including the reserved sugar but not the chocolate chips and mix for 5 seconds on speed 5
Add the chocolate chips and mix speed 4, Reverse for 5 sec
Spoon the batter into the cases
Bake for 20 mins
Remove from oven and allow to cool for 5 minutes before placing on a cooling rack

These muffins are so light and fluffy. They're now my most favourite muffin recipe ever! I used milk instead of buttermilk and they still turned out perfect. These made 12 normal sized muffins and 24 mini muffins.

Amazing chocolate flavour. Moist. Kids loved them. I used full-cream dairy milk instead of buttermilk for simplicity. The kids helped make them. They were devoured! My only regret is they are not gluten-free (suggestions for the same amazing taste and texture with gluten-free changes most welcome!)

Made today for the week ahead. Hubby gave them thumbs up. I used full cream milk with 1tsp vinegar as i don't have buttermilk. Only negative was my fault, tried to get away without using patty pans but muffins stuck to tin:/ Will use them next time!

Great recipe! Thank you for sharing.... I usually make muesli bars for the kids lunches but I thought because I was time poor and it was the last week of school that I would try these. So glad I did.... But not as glad as the kids! I also used milk and a teaspoon of vinegar - worked a treat!

I love these muffins. Especially straight out of the oven. Dangerous ! I have struggled for years to make muffins like you buy and FINALLY I have found this recipe. Quick, easy, delicious, natural and cheap. Love love love them. I used full cream milk and mixed the mixture for 5 seconds on speed 4, scraped down sides, then another 5 seconds. Then added choc chips, which also needed a little more mixing through. Still great. Yum. Better go take the dog for a walk now tho!

Delicious muffins! I made 63 mini muffins with this mixture & cooked for 12 mins on 200 degrees fan forced oven. I also used full cream milk instead of buttermilk.

Fantastic recipe, we couldnt wait for them to cool down before we tried them so ate some while the chocolate was still oozing and was delish! I made some full sized ones for adults and mini ones for the kids, they are a hit, i didnt have dark choc so substituted it with milk chocolate I also used plain milk as i didnt have buttermilk. Thanks for a great recipe!
I have just made these using
I have just made these using wholemeal sr flour and only 200g of choc chips. I also sprinkled a few extra choc chips in top of the muffins. They turned out perfectly. Also This recipe (with my variation) made 12 standard muffins plus another 10 mini muffins, so it makes lots.
