Recipe's preparation
- Pre-heat the oven to 170 degrees.
Line muffin trays with patty cases.
Place all ingredients in the TM bowl and mix on speed 5-6 for 40 seconds.
Fill the patty cases until 2/3s full.
Bake for 17-20 mins.
Can ice with any icing - I removed the Fruity Icing as the proportions were out.

I've made this cupcake recipe at least a dozen times now over the last six months, these are my go to vanilla cupcake recipe. I've tried several others, but they just don't stack up against this one. And I always get at least 18 cupcakes out of this recipe. They freeze perfectly too. Thanks for the share

Fantastic recipe! Light, tasty and stayed fresh for quite a few days. Only downside was that the icing (I used strawberries and blueberries) was much too runny and didn't set properly. Next time, I'll use a lesser quantity overall and increase the icing sugar to fruit ratio to try and thicken it up. Tasted delish though! Thanks!
