  • 250 g unsalted butter, at toon temp
  • 200 g caster sugar
  • 250 g Self Raising Flour
  • 2 tsp baking powder, to make them extra light
  • 2 tsp vanilla extract
  • 4 eggs
  • 100 g Milk

Recipe's preparation

  1. Pre-heat the oven to 170 degrees.



    Line muffin trays with patty cases.



    Place all ingredients in the TM bowl and mix on speed 5-6 for 40 seconds.



    Fill the patty cases until 2/3s full.



    Bake for 17-20 mins.


    Can ice with any icing - I removed the Fruity Icing as the proportions were out.

    I've made this cupcake recipe at least a dozen times now over the last six months, these are my go to vanilla cupcake recipe. I've tried several others, but they just don't stack up against this one. And I always get at least 18 cupcakes out of this recipe. They freeze perfectly too. Thanks for the share

    most cupcakes need to be eaten on the day or they go dry. These last for much longer, the flavour is great and so easy to make. great for cake decorating when you want them to last a few days. Thanks!

    Fantastic recipe! Light, tasty and stayed fresh for quite a few days.  Only downside was that the icing (I used strawberries and blueberries) was much too runny and didn't set properly.  Next time, I'll use a lesser quantity overall and increase the icing sugar to fruit ratio to try and thicken it up.  Tasted delish though! Thanks!
