Upside down Plum Cake

Ingredients

12 portion(s)

  • 100g Butter, chopped
  • 150g Soft brown sugar
  • 12 plums, Halved, deseeded
  • 125g Butter, chopped
  • 200g white caster sugar
  • 3 eggs
  • 1 tsp vanilla bean paste/extract
  • 100g SR flour
  • 100g plain flour
  • 100g almonds, Ground
  • 150g Full Cream Milk.

Recipe's preparation

  1. Preheat oven to 180C / 160C fan forced.

    Add almonds to mixing bowl and chop for 10 sec / sp 6.

    Set aside, no need to wash the bowl.

    Add the butter and sugar and heat for 3 mins / 90C / sp2.

    Whilst the sauce is cooking cut plums in half and deseed.

    Pour caramel sauce onto greased and lined 25cm square cake tin.

    Add the plums face down in the sauce.

    Add the butter, sugar, eggs and vanilla into mixing bowl and mix 20 sec / sp5. Scrape down the sides of the bowl and mix for a further 10 secs.

    Add the flours, ground almonds and milk to the mixing bowl and mix again for 30 sec / sp5.

    Pour cake mixture ontop of the plums and sauce in the cake tin and bake for an hour at 180C/160C fan forced or until skewer comes out clean.

    Tip cake onto platter so that the plums are now at the top of the cake

    Best enjoyed served warm with cream.

Tip

This cake could be made gluten free by omitting the flour and adding 150g almond meal.

    Easy and delicious. Quartered the plums and used a round 23cm tin. Almonds give a nice texture.
