Vanilla Custard Cake

Ingredients

Cake Mix

  • 330 grams raw sugar
  • 250 grams soft butter
  • 2 teaspoons vanilla extract
  • 330 grams Self Raising Flour
  • 100 grams custard powder
  • 4 eggs
  • 260 grams Milk

Recipe's preparation

  1. Preheat fan forced oven to 160degC.  Grease and line with baking paper a 23 cm deep cake tin, or two smaller tins.  


     


    1. Weigh raw sugar into bowl and grind for 5 seconds on speed 9.


    2. Add all remaining ingrediants and mix for 20 seconds on speed 4.  Scrape down bowl.


    3. Mix for 20 seconds on speed 5.


     


    Pour into prepared tins and bake for 45 mins, or until a skewer pushed into the middle of the cake comes out clean.


     Cake can be dusted with icing sugar, but it's yum enough that it doesn't need any icing.

Tip

This recipe is easily halved, although I like to make two smaller cakes and freeze the second.  It's perfect for lunch boxes, as it doesn't need to be iced.

    My hubby, kids & friends love this cake, I have made it at least 10 times, just kept forgetting to leave a comment. I did cut the sugar back by 50g. I have filled with cream but we prefer it as is. Thank so much for the recipe 🙂
