Cake Mix

  • 150 grams pumpkin, cubed or sliced
  • 1 banana
  • 3 eggs, or 2 large eggs
  • 60 g Milk
  • 100 grams Coconut sugar
  • 120 grams Avocado Oil
  • 180 grams flour, self-raising (wheat), or a mix of gluten free flours
  • 1/2 level teaspoons ground cinnamon
  • 60 grams dried cranberries, optional

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.       If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Pumpkin and Banana Spiced Muffins
  1. Line 18 hole muffin tin/s with muffin papers - turn on the oven to 160c-180c depending on oven.
  2. Weigh into bowl chopped pumpkin pieces (3 cm) and chopped banana.
    Add the lid and measuring cup and mix 6 seconds / speed 6
  3. Scrape down the bowl.
    Add eggs, milk, sugar and oil
    Add the lid and measuring cup.
    Mix 10 seconds/Counter-clockwise operation speed 3
  4. Scrape down the bowl. Add flour, cinnamon, dried cranberries (optional - could use sultanas or other dried fruis).
    Add the lid and measuring cup.
    Mix 15 seconds/ Counter-clockwise operation/speed 4. Scrape down bowl with spatula.
  5. Pour batter into prepared muffin tins.
    Bake at 160c for 20 mins then test with toothpick. Done when toothpick comes out clean.
  6. Allow to cool in pan. Can be eaten as is or sliced and served with butter.

A mixture of nut and other grains/seed flour could be tried.
