Vegan Chocolate chip cookies

  • 1 cup Flour (plain)
  • 2/3 cup cocoa powder
  • 3/4 cup brown sugar
  • 1/2 cup (vegan) butter
  • 3 tbsp aquafaba, aka liquid from tinned chickpeas
  • 1/2 tbsp vanilla extract
  • 1/2 cup choc chips, + extra for top
  • pinch salt, + extra for top

Recipe's preparation

    Method
  1. Mix together butter, aqaufaba, sugar and vanilla speed 4 for 15 seconds.

    Next add in flour, cocoa powder, salt and choc chips and mix for 20 seconds, speed 4 reverse.

    Portion mixture into small balls and lightly press down the top and sprinkle with extra salt and choc chips.

    Bake cookies in a preheated oven at 190 degrees for 18 min.

Tip

To make these gluten free you can sub in 1 1/4 cup gluten free flour.

If you don't have aquafaba you can make a flax egg with 2 tbsp flax meal and 1/4 cup milk/water.
