White Choc Chunk & Macadamia Biscuits

Ingredients

  • 125 grams white chocolate
  • 125 grams macadamia nuts, chopped and toasted
  • 125 grams Butter, softened
  • 125 grams brown sugart
  • 1 egg
  • 225 grams plain flour
  • 1 level teaspoon baking powder

Recipe's preparation

  1. Preheat oven to 180C & line 2 baking trays with baking paper.

  2. Place Chocolate into bowl, coarsely broken up into pieces. Chop on Speed 5 for 3-5 Sconds (depending on how big you like your choc chunks). Remove chocolate and set aside.

  3. Add Macadamias to bowl. Chop on Speed 4 for 3 Seconds. Dry roast Macadamias at 90C on Speed 1 for 5 minutes. Remove from bowl and set aside with Chocolate.

  4. Add coarsely chopped Butter and Brown Sugar to bowl. Cream on Speed 5 for 10 seconds.

  5. Add Egg and cream on Speed 5 for 10 Seconds.

  6. Add Plain Flour, Baking Powder, White Choc Chunks and Macadamias to bowl. Incorporate in Reverse on Speed 2 for 15 Seconds.

  7. Spoon tablespoons of mixture into balls and place on lined oven trays, about 5cm apart. Flatten each ball slightly and bake for 12 minutes until lightly golden. Swap trays over after half cooking time.

    These are great! I decreased sugar to 100grams. I also roasted my macadamias in the oven, only beacuse I hadn't read step 3 yet. I wish I had read the comments and broken the nuts myself. But will definitely be making again as delicious!

    Very yummy, thank you. We chopped the nuts finer than recommended as im not a huge fan, so next time i might try cashews or almonds.

    Great cookies.  Very easy to make.  I subbed zucchini for oil and a mix of coconut sugar and medjool dates (80g) for the sugar.  Came out great and defintely sweet enough.

    I have made these a few times now and love the flavour and texture.  Today I tried a slightly healthier option by replacing the butter with coconut oil and also used coconut sugar. Delicious!!!

    These are really yummy. I would reduce the sugar next time I made them as the white chocolate buttons add extra sweetness.  They turned out perfect using gluten free plain flour & coconut sugar

    Totally delicious! The first time I tried to whizz the macadamias and they went like powder and some chunks, so I set aside to use the powder in a smoothie another time, and just smacked the nuts with a rolling pin in a tea towel. This was much better! I like big chunks! I also cut down the sugar to 100g and this was fantastic! YummO! Thanks for the recipe.
