Orange Prep

  • 2 small whole oranges, (approx 400g)
  • 1200 g water

Jaffa Cake

  • 1 cup almond meal
  • 2 tbsp cacao powder, (or cocoa)
  • 3 tbsp honey
  • 2 Eggs, Large
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1 tsp cocnut oil, for greasing the cake tin

Recipe's preparation

    Boiled Oranges
  1. Place whole oranges in Thermy and cover in 1200g of water. Boil at temp 100, 60 mins Counter-clockwise operationGentle stir setting

  2. After the hour tip out the water and allow to cook before blending the whole oranges speed 8, 10 sec, scrape down the bowl and repeat.

  3. Jaffa Cake
  4. Turn oven on to 160 degrees and grease a small cake tin with coconut oil.

    Add the rest of the Jaffa cake ingredients and blend speed 6 for 20 secs.

    Cook for 30 mins or until a knife comes out clear. Nb/ this is a very moist cake a little stuff on the knife is ok.

    Allow the cake to completely cool in the tin before turning it out or it might break.

Tip

This is a Thermy conversion of this great Boiled Orange cake receipe (//www.petite-kitchen.com/2012/11/boiled-orange-chocolate-cake.html). The original receipe is for double the mixture.

Ive topped my cake with a naughty choc butter icing and strawberries, but if you want to keep it healthy just dust with some extra cocao.

    This is a great recipie. I cooked it at 170 degrees in oven as it was a bit soft in the middle still after 30 minutes.

    This was nice but a little bit too orangey for us. I made them as cupcakes rather than a full cake and tha worked fine.
