Almond and Chocolate Easter Bread

  • 600 grams plain flour
  • 60 grams sultanas
  • 50 grams raw sugar
  • 10 grams Yeast
  • 25 grams cocoa
  • 300 grams Milk
  • 2 eggs
  • 50 grams choc bits
  • 1 egg yolk
  • 2 tablespoon flaked almonds

Recipe's preparation

  1. Add milk to TM bowl and warm for 1 1/2 minutes on 50 deg speed 1.

    Add 2 eggs and mix 10 seconds on speed 4.

    Add flour, sultanas, sugar, yeast and cocoa and bring together for 6 seconds on speed 4.

    Set dial to closed lid position, 2 minutes Dough mode. Add choc chips through the hole in the lid in last 30 seconds of kneading.

    Preheat oven to 180deg. Line a baking sheet with baking paper.

    Set dough aside in Thermomat or a bowl covered with a teatowel for 30-60 minutes or until doubled in size. Punch down and cut into 3 equal pieces. roll each one into a sausage shape about 50cm long. Plait these and make into a wreath shape. Press the ends together to join.

    Brush with egg yolk and sprinkle with almonds and bake for 25-30 minutes or until the bread sounds hollow when tapped on the bottom.

    * I tried to get a photo, but it was eaten in seconds after I got it out of the oven. Steaming hot and spread with butter, the testing panel (my half starved never fed family??!!) were impressed!
