Buckwheat Wraps/Totillas (Gluten Free)

  • 150 grams buckwheat flour (or kernels, see tip)
  • 90 grams water
  • 115 grams milk (see tip for dairy-free option)
  • 2 eggs
  • 1 teaspoon salt

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. - Place all ingredients in bowl Closed lid

     

    - Mix at Speed 4.5 for 17 secs

     

    - Grease base of a non-stick fry pan with a small amount of butter or olive oil and heat on stove on medium heat

     

    - Pour batter into centre of pan and move the pan around to spread the batter thinly and evenly - use the first one as a gauge as to how much batter you need to achieve the desired size

     

    - Once you see the batter starting to dry-out and the sides start to lift away, flip over and cook for an additional 30-40 seconds

     

    - Fill with desired fillings, wrap and enjoy!

Tip

Do not over-grease the pan as this will stop the batter from spreading evenly

 

Buckwheat kernels can also be used if you don't have the pre-ground flour. Pour kernels into mixing bowl, speed 10, 2 seconds (repeat if necessary).

 

For a dairy-free option, replace milk with 50 grams of water and add 2 extra eggs.

    LOR: I'm so sorry for late response! Haven't tried freezing - I have only ever made enough to consume there and then (family of 6!). I can't see why you couldn't though. I'd probably place a peice of baking paper in between each one so they don't stick together and so you can also take away how many you want and leave the rest frozen! Just a thought tmrc_emoticons.)
