Buttermilk Brioche Buns

  • 3 tablespoon sugar
  • 485 gram flour
  • 4 teaspoon dried instant yeast
  • 1.5 teaspoon kosher salt
  • 76 gram Butter

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Dough
  1. Combine 300gm of flour, sugar, yeast and salt in the TM bowl mix for 1 min on sp2

    Place the butter and buttermilk into the micowave and cook on high for 1 min until quite warm.

    Add the buttermilk and butter to the flour mixture, mix on Dough mode setting for 2mins,

    Add egg and the remailing 185gm of the flour. Dough mode for 4-5mins. Add more flour until dough starts to leave the side of the bowl.

    Leave in the bowl until well risen, tip onto a mat and form into buns or loaves.

    Place in the oven on 30* for about 15-20mins until risen, when nearly to the size you want turn the temperature up to 200* cook for 15-20mins.

    Brush with Butter when out of the oven.

    Makes 15 72-80gm buns
