  • 1 tbsp dried instant yeast

  • 150 gram Haighs Orange Pastilles
  • 100 gram glace orange

  • 60 gram plain flour
  • 20 gram cocoa powder
  • 1 teaspoon olive oil
  • 100 gram water
  • 2 tablespoons sugar

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.       If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Place milk and yeast into mixing bowl and heat 3 min/37°C/speed 1.
    Add baker's flour, butter, caster sugar, egg, ground cinnamon, ground nutmeg and ground cloves and mix 6 sec/speed 7. Scrape down sides and lid of mixing bowl with spatula.
    Add glace orange, 150g Haighs orange pastilles and currants then knead Dough /2 min.
    Preheat oven to 200°C. Line a baking tray with baking paper and set aside.
    Transfer dough onto silicone bread mat or floured work surface and work into a ball. Wrap in silicone bread mat, or place into a bowl and cover with plastic wrap or a kitchen towel. Leave to prove in a warm place until doubled in size (approx. 30 minutes).
    Knock down dough and divide into 12 equal-sized pieces. Form into rolls and place close together onto prepared baking tray then set aside to prove again while you prepare the piping.
    Place small bowl on top of mixing lid.
    Place plain flour, 20g cocoa, olive oil and water into small bowl and mix till smooth.
    Pour into piping bag and pipe crosses onto the top of buns. Bake for 15 minutes (200°C) or until golden brown. Clean and dry mixing bowl.
    Place water and sugar into mixing bowl and cook 2 min/100°C/speed 4.
    Using a pastry brush, apply hot sugar syrup onto buns while still warm.
    Allow to cool on tray for 5 minutes before transferring onto a wire rack. Serve warm.

Tip

I used one bag of Haigh's orange pastilles but any orange flavoured chocolate would work. The pastilles can be added whole as they will break up a little during the kneading.
The glace orange comes from Germany, where glace orange and lemon are sold separately. I use one container of the glace orange for a true orange taste, but glace peel could be substituted.
I've made the dough then separated into half, adding currants to just one half of the mix, working in after kneading and as preparing them into buns before proving.
An orange marmalade glaze can also be used instead of a sugar syrup glaze.
Oven temperature may vary - 200 works in my fan forced oven, but you may need to go up to 220.
