Cottage Cheese
- 500 g cottage cheese
- 1 level tsp baking powder
- 1 level tsp bicarbonate of soda
- .75 litres rolled oats, (3 cups)
- 3 eggs
- 0.5 tsp salt
- 0.17 litres Mixed seeds, (2/3 cup of flaxseed, chia, sunflower seeds)

- Add 500g of cottage cheese to
"Closed lid" . - Add 1 tsp baking powder (GF if needed).
- Add 1 tsp bicarbonate soda.
- Mix 10 sec.
"Counter-clockwise operation" Speed 4 REVERSE. - Rest the mixture for 2 minute so that the bicarb soda can work its magic.
- Add 3 cups of rolled oats (use GF oats if required).
"Closed lid" - Add 3 eggs.
"Closed lid" - Add 1/2 tsp of salt.
"Closed lid" - Add 2/3 cup of seeds (e.g. flaxseeds, sunflower seeds, chia seeds).
- Rest dough for a couple of minutes to allow oats to absorb some of the moisture.
- To bake as a loaf, pour the mixture into a lined bread tin and bake for 60 minutes (skip this step if you want to make breadrolls).
- To make breadrolls, divide the dough into 10 equal pieces. Form each piece into a ball with wet hands and place on a large lined baking tray. DO NOT press down the balls (they will form into bread rolls during baking). Bake for 30-35 minutes and cool on a wire rack.

The bread rolls freeze really well.
I thaw one breadroll by warming it in the microwave for 30 seconds for a perfectly fresh roll to enjoy.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -
