  • 500 g bakers flour
  • 470 g warm water
  • 2 tsp Yeast dried or (1 Sachet)
  • 2 tsp salt
  • 6

Recipe's preparation

    Easy Ciabatta Bread
  1.  


    - Add all ingredients in the bowl, mix on sp 6 for 8 seconds. Let mixture rest in bowl for 10 minutes. 

  2.  


    - Turn up to Sp 9 for 3 mins (yes 3 mins!) on counter-clockwise operation. Stay next to your Thermie to make sure it doesn't jump off the bench!

  3.  


    - Dough will be very sticky - pour into a large well-oiled bowl and let sit for 2.5 hours until tripled in size.

  4.  


    - Empty and scrape out the dough onto a well floured thermomat or bench top. 


     

  5. - Divide into 3 pieces, dust with a good amount of flour, then using spatula shape roughly into flat balls. 


     

  6. - Leave to prove on the mat for 45 mins. While waiting, turn the oven to 250c to heat up while proving and line 2 or 3 trays with baking paper. 

  7.  


    - Now, with well floured hands, pick up each dough gently and quickly flip it , stretching into a ciabatta loaf shape (oblong). The flipping helps spread the air bubbles - even if it looks a bit dodgy, trust me it will rise beautifully in the oven!

  8.  


    - Bake at 250 for 10 mins, then turn the oven down to 200 for another 15-20 until bread is starting to brown and sounds hollow when tapped.

    I read all the comments and decided to sprinkle salt/rosemary on top and my gosh/wow factor!!
    I also found mine cooked quicker than anticipated, so keep checking your oven.

    A very easy recipe. I forgot to turn it on reverse but it didn't seem to make any difference. I have a Miele oven and proved it for one hour at 30 C and it tripled in size easily. After shaping I proved it for another 30 minutes before baking it with a shot of steam. It was perfect, hard crust and soft inside with plenty of holes . The crust did however soften as the bread cooled. I will make this all the time. Thank you.

    Hi ...... I have made this a few times and find it fantastic. Just wondering, when I have it on reverse in my TM 5 it makes such a " struggling noise " that I wonder if it's OK for the TM. Please let me know what you think.

    This is a winner. My crust was very soft and thin the first time I made it (perfect otherwise, though!) so I now put a dish of water in the bottom of the oven and I get a gorgeous chewy, crusty crust. I've made it as per recipe, with plain flour, and also with half white half wholemeal flour. Perfect results every time. Thank you for the recipe!!

    Surprised me how well it worked - I was sceptical at all stages!  I halved the recipe with no problems except I think I need to use a slower temp as my oven runs quite hot (and is fan forced...).  Really impressed and will definitely make again.

    This is a wonderful recipe, my famiily prefers this to bought options. It disappears in no time when we have it with dip. I make it most weekends, shaping it into 6 separate rolls and freezing them. Then we take them out of the freezer and make them into foccacias for lunches during the week.

    I've never been a great baker, but after seeing this recipe recommended I thought I'd give it a go as we love ciabatta in our household... Wow!! Turned out perfectly!! My loaves were maybe slightly small, but tasted amazing and had the air pockets and everything! Can't believe I did it so well first time. Great recipe and will definitely be making it over and over!     So happy this still turned out with so little time.

    i used home brand flour and only had 30mins to prove on a shelf above a warm oven

    then formed into flat long balls on baking tray and let prove for another 30mins before baking.

    It was yum and it had the holes in it and all. Was great with our homemade pumpkin soup. This is a pic of it. Sorry it loaded sideways.
