      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Place starter, water, yeast (if using) into TM mixing bowl. 37C, 2 min speed 2

  2. Add flour, speed 5, 11 secs

  3. Rest in mixing bowl for 30 min, add salt. 3 min interval speedDough mode

  4. Place in container large enough to allow for doubling in size, lidded plastic box is good. Allow 4 - 6 hours (depending on room temp)

  5. When doubled in size gently ease into desired shape with palms of hand underneath dough. Dont squeeze the dough, join folds together underneath loaf.

    Place in sealed container in fridge overnight

  6. Allow dough to come to room temp, preheat oven to 220C. Slit dough with sharp knife 2 or 3 times, sprinkle with water and bake for 30 - 40 mins on tray in lower part of oven. The last 5 - 10 mins on bare oven rack is optional.

    When bread sounds hollow when tapped on the bottom it should be ready.

    Allow to rest for at least 45 mins

  7. Different ovens will obviously have varied results, loosely placing some foil over loaf will increase baking time without burning crust.

    More water on loaf will give a thicker crust

    Hi there, is the salt for flavour or does it work as an active ingredient? I only have a salt grinder and will be there for days grinding out 5+ grams of salt by hand! Lol Lol Lol

    Lovely! I found it hard not to overhandle and got quite a dense crumb (which is OK, just different to other recipes I have tried). It was perfectly cooked and was delicious. Doesn't last long around here! Lol

    By far my favourite one & easy to follow. I speed up the first rise by placing a shallow tray of boiling water in the closed oven. Then shape & refrigerate overnight.
