If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Place water and yeast into mixing bowl and mix 2 mins/37 deg/ speed 1.
Add flour, salt, sugar & ascorbic acid and blend 10 sec / speed 7.
Knead "Dough mode" 6 mins.
Form into a rough ball and place in a lightly greased bowl. Cover with a tea towel and leave in a warm place to prove for about an hour, or until doubled in size.
Once doubled in size, knock out dough on a thermomat or floured surface and shape into rolls or place in a greased bread tin.
Cover with tea towel and return to warm place until doubled in size again (about 1-1.5 hours).
Place in preheated over at 180 degrees for 30 mins, or until golden on top and hollow when tapped on the bottom.

Tip
This was adapted from TRTLMT bread recipe. I wanted to make nice fluffy bread without using bread improver. If you want to add seeds, add them for the last 30 secs of kneading. Add whatever seeds you like - about 6-8 Tbl in total.
