Gluten Free Chia Seed & Almond Bread

Ingredients

Bread Ingredients

  • 2 tbsp chia seeds
  • 30 grams water
  • 100 grams arrowroot/tapioca flour
  • 1 tsp baking soda/bicard
  • 130 grams almond meal, (1 cup)
  • 20 grams apple cider vinegar
  • 3 eggs
  • pinch sea salt

Recipe's preparation

  1. Preheat oven to 175c

     

    1.  Soak chia seeds in the water whilst preparing the rest of the mix.  Make sure seeds are in the water.

     

    2. Add Arrowroot/tapioca and baking soda to the TM bowl and mix 3 secs/spd 5


    3. Add almond meal and salt and mix again 3 secs/spd 5


    4. Add eggs, soaked chia seed and apple cider vinegar. Combine 6 secs/spd 3 or until well combined and there are no lumps

     

    5. Pour mix in to a lined baking pan or silicon mould

     

    6. Bake for 25mins until bread is firm to the touch and buonces back when lightly pressed. 

     

    Remove from the oven and turn out on to a cooling rack.

     

    Adjust cooking time to 45-50 mins if cooking double mix.

    Thank-you! This bread has saved me struggling with the anti-candida and FODMAPS diet. Not sure if Arrowroot flour is allowed but at this stage I'll do anything
