Ingredients

0 portion(s)

  • 250 g Milk
  • 1 tablespoon Yeast
  • 1 tablespoon honey
  • 30 g Butter
  • 1 egg
  • 200 g rice
  • 55 g tapioca seeds

Recipe's preparation

  1. Heat milk for 3mins at 37C on speed soft. Set aside and mix with yeast and honey.

  2. Preheat oven to 190C.

  3. Grind rice and tapioca seeds for 1 minute on speed 9.

  4. Add remainder of dry ingredients (flours, gum, baking powder, salt) and any desired flavours such as herbs, parmesan cheese, sun dried tomatoes etc. Blend on speed 6 for 10 seconds.

  5. Add wet ingredients (egg, butter and mixture of milk/honey/yeast which should have foamed up by now). Mix on speed 6 for 5 seconds, scrape down sides and continue mixing on speed 2 for 30 seconds.

  6. Using your spatula (or your hands if you like but the dough will be quite sticky) scoop out the dough, forming ten fist sized balls and placing them in a lined/greased pie tin.

  7. Sprinkle with additional cheese, herbs etc. if desired and bake at 190C for 20-25 minutes or until the crust is golden.

Lovely bread and easy to make. I put sun dried tomatoes and olives in it. Next time I will mix these at the end so they are chunkier. Will definitely make it again.

This is AMAZING!  I put bacon and cheese through it and YUMMO!  It was so tasty, and my daughter and I have had it for Breakfast and Lunch over the last 2 days and now she's insisting I make it again for tomorrow's menu!  Thank you, so much flavour and not rubbery or tough!  LOVE IT!

  • This is great, I made it

Submitted by Yvette Troy on 28. March 2014 - 11:24.

This is great, I made it twice in one day. I kept it gluten free but did lower the oven temp. Looking forward to playing around by adding different herbs and cheese to suit the purpose. Thanks for sharing.

  • This was delicious, thanks!

    Submitted by Christine E on 23. March 2014 - 19:10.

This was delicious, thanks!  I didn't have sorghum flour and intended to use oats as a substitute recommended in a previous comment.  However, I forgot to mill it beforehand, so made up the 40g using the other flours in the recipe and it was great. tmrc_emoticons.)

  • This has become a family

    Submitted by Correne on 6. August 2013 - 14:00.

This has become a family favourite of ours! Nice soft bread and love making them in different flavours. I've found 190 is too hot, so I set my oven for 170 but cook them for an extra 10 mins or so tmrc_emoticons.)
