Dough

  • 150 g plain yoghurt
  • 120 g water
  • 1 egg
  • 30 g ghee or butter
  • 500 g plain or bakers flour
  • 5 g baking powder
  • 5 g bicarbonate of soda
  • salt, to taste
  • 3 teaspoon Black Onion Seeds, optional
  • 2 teaspoon sugar, optional

Recipe's preparation

    Dough
  1. Preparation

    1.

    In TM bowl add egg, sugar, yoghurt, water, ghee or butter and heat on 37 degrees for 2 minutes.

     

    2. Add the flour, bi carb, baking powder, salt. Turn speed dial on closed bowl position and knead for 4 minutes. The dough should be soft. 

     

    If the dough is too hard add 20ml warm water and re knead for 2 minutes. 

     

    3. Take out of the TM bowl and place on the Themomat. If there is any dough caught around the blade, pulse twice on turbo speed and remove using the spatula.

     

    4. Add a little oil on your hands and coat the dough, wrap in the the thermomat and rest for 2 hours. `

     

    5. After 1 1/2 hours, pre-heat oven to 200 Celcius.

     

    6. Divide the dough into 10 equal portions. Apply little oil and sprinkle onion seeds on top. 

     

    6. Press side first and then centre  of the dough ball. Give it a round flat shape. 

     

    7. Stretch from one side to give a triangular shape - approx 6 inches in diameter. Using a fork, prick the naan all over. 

     

    Method 1. Baking in Oven

     

     Place on an lightly oiled baking tray.Remove from oven when it is crisp and brown. 


    Method 2:  Dry Pan 

     

    1. Heat a fry pan on moderate heat. 

    2. Place the naan in the pan, cook until large  bubbles  appear on the surface and the underside looks cooked and little brown.Then turn it over and cook the other side for few minutes. 

     

     Serve  hot,  with  plain or garlic butter.  Enjoy !!!!!!

    very very good recipe!

    i heated a cast iron pan very hot on stove and put the rolled dough in the dry pan for about 1 min then turned and covered with a glass lid for another min , took out smeared butter and sprinkled nigella seeds

    was very good--dough is sticky - use a silicone mat and put just a drop of oil on it and smear then its easy to roll out , wont be uniform but who cares

    i had extra dough in fridge and i used it 3 days later and it was even better .i had wrapped it well with cling wrap
    the refridgerated dough always has some black spots on the outside but when rolled was no prob

    i was amazed and pleased it lasted so well


    leftover ones i put in airfryer 3 min 200 degrees -was reasonably good smeared with butter

    loved this. Perfect quality & quality. Can't believe I made this so easily. Thank you so much.
    The dough is very forgiving, I made up some after the 2 hours, but couldn't do entire batch, so, re wrapped and left out on bench and finished the dry fry off the next day, they were perfect too.

    Loved this recipe - so easy, used the pan fry method, sprinkled with a bit of oil, bubbled up beautifully then flipped over - very authentic.  The kids thought I had bought them from our very good local takeaway.  tmrc_emoticons.)
