Life Changing Loaf (Bread) - Air fryer or Oven
- 65 g almonds, whole
- 90 g flaxseeds
- 20 g Maple syrup
- 45 g Ghee
- 350 g water, tap water temperature
- 90 g sunflower seeds
- 45 g pumpkin seeds
- 3 tablespoons chia seeds
- 4 tablespoons Psyllium husk
- 145 g rolled oats, whole or quick
- 1 teaspoons salt, table or Himalayan

- Preparing the dough
1 Place almonds and flax seeds into mixing bowl and chop with measuring cup in lid 4 sec/speed 7
"Closed lid"
2 Add maple syrup, ghee and water and heat for 3 minutes to melt the ghee 3 min/55°C/speed 1

3 Add sunflower seeds, pumpkin seeds, chia seeds, psyllium husk, rolled oats and salt and knead the bread on dough setting for 30 seconds
"Dough mode" - Proofing the dough
5 Line baking tin with greaseproof paper
6 Transfer the dough to a loaf baking tin (reasonable quality thickness if possible)
7 Flatten off the dough nicely into a loaf shape with a spatula
8 Sit the tin on a wooden plank at least at room temperature for 2-24 hours to give the psyllium husk time to develop - Baking the bread (Airfry or Oven)
9 Preheat oven to 180°C. This step is not required for air fryer
10 Bake the loaf upright in the tin for 25 minutes at 180°C
11 Take loaf out of the oven/airfryer and tip loaf upside down out of the tin
12 Remove baking paper
13 Return loaf to the airfryer or oven and bake upside down without tin for a further 45 minutes
Preparing the Life Changing Loaf
Tip
Make Ghee from Cookidoo recipe and store at room temperate for easy measuring and use. Can substitute Ghee with butter.
Flax seeds are chopped to make them more readily digestable
Can substitute pumpkin seeds for other nuts and add at earlier nut chopping stage if needed
Store loaf in airtight container in refrigerator for a few days or pre-slice and freeze.
Put slices in toaster to thaw a slices when needed
Use a sharp knife to cut the dense loaf into around 15 slices
A nutrient dense loaf rich in phytoestrogens, supporting hormonal balance and women's health through menopause and beyond - enjoyed by men and women alike!

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -
