Mediterranean bread

Ingredients

  • 2 cloves garlic
  • 50 grams sundried tomatoes
  • 50 grams Olives
  • 50 grams Roasted Capsicums
  • 400 grams Bakers Four
  • 220 grams Luke Warm Water
  • 1 sachets Yeast
  • 20 grams olive oil

Recipe's preparation

  1. Chop to cloves of garlic on speed 8 for 5 secs.

  2. Add sundried tomatoes, olives, capsicum and chop for 4 sec on speed 6 or until roucghly chopped. Set aside into a seperate bowl for later.

  3. Add flour, oil, yeast and luke warm water. Mis speed 4 until combined. Knead for 2minGentle stir setting

    Place measuring cup in and allow bread to double in size for approx 30mins.

  4. Add chopped vegtables from seperate bowl onto bread mix. Knead for 10 sec or until combined.

    Turn dough mixture out onto oven trays in two seperate log shapes. Mixture will be quite moiste.

    Allow to rise in a warm area for another 30mins.

  5. Place in oven at 180deg C for 20-30mins until golden and hollow sound when tapped.

Tip

Great served warm or cold.

Can slice the bread and toast as well.

Great with hummus or dips spread on or part of an antipasto board.
