Olive Bread

Ingredients

  • 650 g plain flour, plus extra to dust
  • 2 tsp sugar
  • 1 tsp sea salt
  • pinch pepper
  • 7 g sachet dry yeast
  • 80 g olive oil
  • 375 warm water
  • 90 g black olives, pitted

Recipe's preparation

    Dough
  1. Measure flour into TM bowl

    Add sugar and salt

    Add yeast and season with pepper

    Add oil and 375gm water

    Mix 5 seconds on speed 6

    Mix 3 minutes on dough setting adding olives with 30 seconds to go

  2. Place mixture in an oiled bowl and sprinkle with water.

    Cover with plastic wrap, then wrap with a tea towel on top

    Stand in a warm place for 1 hour until doubled in size

  3. Preheat oven to 180C (fan forced)

    Grease and flour a baking tray

  4. Lightly knead dough with floured hands for a few seconds (mixture may be a little sticky) to knock down and remove any air bubbles trapped

    Cut dough in half and shape into two 25cm loaves

    Place on the prepared tray, sprinkle with flour and re-cover with a tea towel

    Leave to stand for 15 - 20 minutes or until doubled in size

  5. Slash the top of the loaves with a sharp knife to create decorative effect

    Bake at 180C for 20 minutes

    Reduce temperature to 160C and bake for a further 25 - 30 minutes or until bread sounds hollow to tap

    the only thing is that my olives were were all on the outside. Maybe I didn't put them in with enough time?

    Anyway , still yummy.  I will definitely make this again
