Olive & Sundried Tomato Bread

DOUGH

  • 3 cloves garlic
  • 1 tbsp dried rosemary
  • 380 g lukewarm water
  • 2 tsp instant yeast, or 1 sachet
  • 20 g extra virgin olive oil
  • 500 g bread flour
  • 150 g wholemeal flour
  • 1 tsp salt
  • 80 g Pitted black olives
  • 20 g sundried tomatoes, roughly chopped

Recipe's preparation

    DOUGH
  1. Note : This makes 2 medium sized loaves.

     

    1. Place garlic and rosemary in TM bowl and chop 5 sec/ speed 7.

     

    2.  Add lukewarm water, yeast, EVOO, flour and salt (in that order) mix for 6 sec/speed 6.

     

    3.  Knead 4 min/Closed lid/Dough mode adding the olives and sundried tomato in the last 45 seconds. Keep an eye on Thermomix while kneading.

     

    4.  Remove dough from TM bowl, place in a well-oiled bowl  and cover with cling film. Leave to proof in warm dry area for an hour or until double in size.

     

    5.  Remove risen dough from bowl and place on oiled mat. Split into 2 as this makes two loaves. Punch out dough to remove any air bubbles into a flat rectangular shape.  Roll dough tightly like a scroll or shape how you like. Repeat for second loaf. 

     

    6.  Place onto baking tray and leave in a warm dry area to rise again for 30 minutes or until double in size.

     

    7.  Place in pre-heated oven at 190C degrees and cook for 25-30 minutes until golden brown.

    Optional : Sprinkle grated parmesan cheese to the top of the bread just before baking.

     

    8.  Place on a rack to cool.

  3. 1.  For a crusty loaf, place a cup of water at bottom of oven during the baking process.

    2. To keep loaf fresh, keep in freezer after the second day. Toast immediately when required, do not need to defrost.

Tip

This can be done without the garlic or rosemary and is equally as yummy! Feel free to adjust quantity of olives, sundried tomatoes, garlic or rosemary according to preference.

    Absolutely delicious.  Used only stuffed green olives as that's all I had.  Made one huge loaf.  So light and fluffy -divine bread!
