  • 28 g Butter
  • 38 g sugar
  • 420 g flour, (all-purpose, bread)

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Place milk, water, butter and sugar in the jug.
    Closed lid 1.5min/37°C/1 (don't make temp reach 37, makes different flavour I think)
  2. Add flour, salt and instant yeast into the bowl.
    Closed lidDough modefor 3 mins.

    (Check dough, if it's too sticky add a bit of flour, if too dry add a bit of water. Adjust it according to texture. quickly knead it by hand to mix or dont stress, dont readjust the recipe tmrc_emoticons.D )
  3. Put dough in a greased bowl, cover with tea towel and place in a warm spot. Proof dough until double in size or around 45 minutes.
  4. Divide dough in 12 pieces (or 9 if you want it large pieces), shape into a ball and coat with breadcrumbs and put the in large serving dish. Cover with foil and let it rise for 45 minutes.
  5. Bake in 180°C (160°C fan forced) for 13 minutes.
  6. Remove foil and continue to bake for another 10 minutes or until light brown.
  7. Take it out of the oven and leave for 10 minutes to cool.
  8. Serve or store in airtight container.

Tip

The measurements does not have to be very exact. For example, 227 can be 225 or 230.

I tried using just all-purpose flour before but it's too fluffy for my husband's liking. He likes it a bit chewy so I added bread flour roughly 100 g, and mix 100 g of wholemeal flour (to make it a bit "healthier") and the rest is all purpose flour. You can adjust it according to your liking.

Some say don't mix salt and yeast together. But with the yeast I use, I haven't have an issue. If not sure try to put the salt before the flour or the yeast with the liquids. Let me know if it works.
