Parmesan Crusted Olive Bread

  • 500 grams bakers flour
  • 2 teaspoons Yeast dried or (1 Sachet)
  • 1 heaped teaspoon sea salt
  • 20 grams EVOO (olive oil)
  • 300 grams lukewarm water
  • 1 clove garlic
  • 2 sprigs rosemary leaves
  • 30 grams Parmesan cheese, cubed
  • 200 grams pitted kalamata olives
  • 6

Recipe's preparation

  1. Place parmesan cheese into mixing bowl and grate 8 sec/speed 8. Set aside.

    2.  Place garlic and rosemary leaves (discard the stalk of rosemary) and chop 5 sec/speed 7.

    3.  Add bakers flour, yeast, salt, lukewarm water and EVOO and mix for 6 sec/speed 6.

    4.  Knead 2 min/Closed lid/Dough modeadding the kalamata olives.

    5.  Remove dough from mixing bowl and wrap in Thermomat or wrap in teatowel and leave to prove in warm dry area for approx 30 minutes.

    6.  Place on baking tray and shape how you like.  Add parmesan cheese to the top of the bread.

    7.  Place in oven at 180 degrees and cook for 20-30 minutes until cheese goes golden brown ontop.

Tip

This can be done without the parmesan (garlic, rosemary and olive bread) and is equally as yummy!

    This was great. Really easy. I took it along as a plate to share at a dinner gathering - everyone loved it.
    I did an extra knead of 30 seconds, where I added the olives so they weren’t too macerated.

    This bread is so simple and easy to make. Beautiful with butter straight out of the oven. Toasted with eggs or avocado - this bread is the BOMB. A regular now in our house.

  • I love this recipe but found

    I love this recipe but found half quantity of olives plenty. I also found kneeding in the well-drained olives by hand at the end produced a less munched up olive result. Tip the dough out of the TM bowl, push into a flat square, sprinkle olives over, roll up like Swiss roll, then randomly fold and kneed to incorporate the olives.

    Highly recommended.

    An absolute winner! Took a loaf to work and had a line of colleagues following the delicious aroma into the office, where they would linger, then sidle up to the bread and say "um, would it be ok if I just tried a piece?" It got to the point I had to hide some, so everyone could get a slice. Next time I'll definately need to take 2 loaves. Thank you for the wonderful, easy recipe.

    Delicious bread! my most "professional" looking loaf to date! i've also tried it with a mix of white and wholemeal flour (300g white, 200g wholemeal) It was a heavier loaf of course, but still worked well and tasted great. Thanks for the recipe
