  • 50 grams psyllium husks
  • 70 grams Coconut Flour
  • 40 grams chia seeds
  • 50 grams raw almonds
  • 30 gram linseed
  • 30 gram pumpkin seed
  • 30 grams sesame seeds
  • 30 grams sunflower seeds
  • 5 gram stevia
  • 2 tsp Baking Power
  • 1.5 tsp pink salt
  • 3 eggs
  • 40 gram coconut oil
  • 400 gram water
  • 20 gram apple cider vinegar
  • poppy seed, for sprinkling on top

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Preheat oven to 200’C
  2. Place almonds and psyllium husks into TM bowl and grind 10 sec/speed 10.Add dry ingredients: coconut flour, chia seeds, linseeds, pumpkin seeds, sesame seeds, sunflower seeds, coconut sugar, baking powder and salt, into TM bowl and mix 10 secs/speed 6.Add wet ingredients: eggs, coconut oil and water, apple cider vinegar; mix 20secs, speed 6
  3. Knead dough 2 mins. Do for longer if necessary
  4. Turn out dough onto Thermomat (baking mat) and carefully roll into a log.The dough can be sticky so if some is stuck at bottom, put bowl back into Thermomix and run blades on speed 9 for 5 seconds to spin the dough off the blades and onto the side of the bowl for easier extraction. Sprinkle Thermomat with sesame seeds and poppy seeds then roll log onto seeds. Using your Spatula, cut into 12 pieces. Shape into balls or rolls and place onto a baking paper lined tray and bake 20-25 minutes
  5. Allow to cool completely on a wire rack before cutting if you can resist them. These keep well for 2 days or longer if kept in a container.
    I use these for my breadcrumbs in recipes.
    The almonds can be replaced with more seeds nut allergies are a consideration.

Tip

You can make these into small loaves, extend cooking time, or make them into flat rolls which are idea for splitting and toasting.
I have also added some fruit or choc and used these at easter.
Ideal for Keto or LCHF diet.
I keep in fridge so they dont go mouldy, espcially if you live in tropics.
