Sweet Pumpkin and Oat bread

  • 280 g Pumpkin purée
  • 180 g water
  • 2 level tsp dry yeast
  • 660 g bakers flour
  • 190 g wholewheat flour
  • 80 g rolled oats
  • 3 level tablespoon non fat powdered milk
  • 1.5 level tsp piece fresh ginger
  • 1.5 level teaspoon piece orange rind
  • 1 level teaspoon salt
  • 160 g currants or sultanas

Recipe's preparation

    Sweet Pumpkin and Oat bread
  1. 1. Roughly chop pumpkin into 2cm dice, place in simmering basket with 1litre water in bowl.

    2. Cook 10 minutes, Varoma, speed 2.

    3. Drain pumpkin and Reserve water.

    4.Mash pumpkin 30 seconds, speed 6. Remove from bowl and reserve. No need to wash bowl.

    5. Place ginger and orange rind in bowl, mill 5 seconds speed 9.

    6. Measure  warm pumpkin cooking water into bowl, add yeast, flours, oats, milk powder, salt, currants or sultanas and pumpkin puree.

    7. Mix 5 seconds, speed 7 to combine.

    8. Set dial to closed lid position, knead dough for 1 minute and 30 seconds on interval speed.

    9.Place dough in a slightly oiled bowl, cover and leave in warm place until double in size.

    10. Place in large bread tin, brush with extra water.

    11. Place into cold oven and bake for  30 - 45 mins at 180C.

    12. Bread should sound hollow when tapped on bottom after baking.
