The Merrymaker Sisters Savoury Paleo Bread

Ingredients

Bread

  • 50 grams chia seeds
  • 200 grams carrot or zucchini or beetroot, roughly chopped
  • 100 grams butter or ghee or coconut oil
  • 8 eggs
  • 30 grams Coconut Flour
  • 40 grams mixed seeds - pumpkin, sesame, sunflower, etc
  • 10 grams dried onion flakes
  • 10 grams dried basil or any herbs you like
  • 1/4 teaspoon baking powder
  • 1 teaspoon Celtic Sea Salt

Recipe's preparation

  1. Preheat oven to 180 degrees and line a 20 x 10cm loaf tin with baking paper

  2. Mill chia seeds - speed 9, 30 seconds and set aside

  3. Chop carrot - speed 5, 3-6 seconds until finely grated & set aside

  4. Melt butter - 50 degrees, speed 4, 1-1 1/2mins. Scrape down half way through to make sure it's all melted

  5. Insert butterfly and add eggs. Whip speed 4, 1min

  6. Add all remaining ingredients and slowly turn up to speed 4 to mix for 10-15 seconds until combined

  7. Piur into prepared loaf tin and sprinkle with some extra seeds

  8. Cook in oven for 40mins or until golden brown on top

  9. Allow to cool for 10mins before slicing into desired sized pieces. Enjoy!!

    Very nice!I have made this recipe twice, once using carrot, once using zucchini, both were great. Also delicious sliced & buttered & fried in a frypan,  it's like savoury french toast. Thanks for sharing
