Ingredients

5 portion(s)

Pizzas

  • 500 grams 00 flour
  • 10 grams dried yeast
  • 5 grams salt
  • 5 grams sugar
  • 300 grams cold water

Recipe's preparation

    Theo Kalogeracos's pizza dough that made him a world champion pizza chef twice over. Converted to TMX.
  1. Mix all ingredients on speed 4 for 10-15 sec until combined.

    Leave to sit for 10 minutes.

    Dough mode Knead for 3 minutes

    Place in an oiled bowl and cover for approx 30 min

    Punch down and separate into 4 balls, roll each out thinly then let rest 10 min.

    Top with toppings and bake at 220 degrees for 10-12 min.

     

     

     

  2. This will make 4-5 pizzas depending on how big / flat you roll them.

    This dough recipe has been halved from the original, double everything to make 8-10 pizzas.

    Perfect. Measured the small ingredients on a small scale to make sure they were precise because I have had issues trying to make breads and doughs. And used lukewarm water, not cold.

    Love this pizza dough recipe. I’ve never been a fan of pizza but that is because its usually takeaway. My two grandsons were having a sleep over and they love pizza so seeing all the good comments I decided to give this one a go and was not disappointed. No more takeaway.

    Lovely pizza dough. Very reliable. I’ve made two batches now, and froze half of the first batch, then used it after thawing in the refrigerator, and was happy with the result. I won’t be looking for another pizza dough recipe anytime soon. Smile

A single zero flour is quite coarse in texture, like very powdery semolina, whereas triple zero is much finer like cornstarch. But everyday flour is usually classed as double zero, or '00'.

    This pizza dough will be my go-to from now on! Love that it doesn't need to prove for hours or overnight like many reccomend. I also used Bakers Flour instead of 00 as it's what I had on hand - no issues using it either. Easily made 5 thin bases for us - flavour was great and they crisped up perfectly. If you haven't tried it, you should!

    Great recipe - even the teenagers commented on the base! I used bakers flour and only 7g of dried yeast (1 packet) and it worked beautifully. I used the ‘intensive bake’ option on the oven, placed on a hot stone on the bottom shelf - fantastic!!

    This is hands down the BEST pizza dough. I roll it really thin and put a thin dusting on polenta on the tray before put the base down. Pre cook for 5 mins, then take out and top and back in the oven for 10 mins. Amazing, thanks for sharing!!

    First time making this. The dough is very wet and sticky still after resting for 30 minutes and separating into four. Will make rolling out very tricky. Is this normal? I've double checked ingredient quantities and method........followed to the letter.

    You take it out of the freezer the night before and put it in the frig. It is perrfect the next day!

    Tip: Oil your hands before taking the dough out of the tmx bowl. Stops the dough from sticking to your hands and means that you don't have to oil the bowl you put the dough in to rise tmrc_emoticons.)

    how come isn't this recipe on the BCB?? Best pizza dough ever!!!
