Ingredients

  • 230 g white rice, (can use Brown)
  • 130 g buckwheat
  • 2 heaped tablespoon linseed
  • 190 g tapioca flour
  • 1 heaped tablespoon xanthum gum, (can ues Guar gum)
  • 1 sachet instant yeast
  • 1 heaped tablespoon salt
  • 4 eggs
  • 60 g Olive or Macadamia Oil
  • 40 g Honey or Maple Syrup
  • 450 g Very warm Water
  • 1 level tablespoon Apple Cidar Vinegar, (can use Lemon Juice)

Recipe's preparation

    Dough
  1. Mill Rice, Buckwheat and Linseed 1.5 Minutes for Speed 10 

  2. Add the rest of the dry ingredients and mix for 6 Seconds on Speed 6 

  3. Add the wet ingredients and mix for 10-15 Seconds on Speed 6.

    Press reverse once or twice to combine if needed

  4. Lightly spray of grease your baking tin

    Pour wet mixture into two baking tray or trays, depending on size and leave to rest in a warm place for 1 hour.

    ie: Cover with cling wrap. The microwave or Window sil in the sun is a great place for allowing bread to rise.

    Preheat oven when 40-50 minutes on 170 Degrees. Allow at least 10-20 minutes of preheating depending on your oven.

  5. Bake for 45 minutes at 170 degrees

     

  6. Let Bread cool for a few minutes then take it out of the tin.

    Otherwise the Bread can sweat.

Tip

Place into the middle of the oven and dont sneak a peak as this can cause your bread to flop.

Dont use the silicon trays as they dont hold the form as well. Always go for a good solid tray. Invest in the best if you want to bake great bread.

Gluten free bread dough needs to be mixed vigorously. Dont worryabout over mixing it. Theres no gluten to over work.

Don't give up if your first loaf isn't perfect, its a skill. It builds with experience. Even if it doesnt look like the pictures i bet it tastes great.

    I have tried countless recipes in the past and have always been disappointed...until now.
    This bread was crusty on the outside and soft on the inside....amazing!
    I made one big loaf (24x15x9cm tin), I popped in a pizza stone when I preheated the oven, placed the bread tin on the pizza stone, threw a few ice cubes on the oven floor and shut the oven door.

    I cooked it for the 45mins as directed but then removed the loaf from the tin and popped it back in, directly on the pizza stone for another 10mins.
    VERY HAPPY! Big Smile

    i didn't have any linseed but added LSA (linseed, sunflower & almond)which had been sitting in my pantry for months.   Now I have a great use for it.

    i can't believe how soft and moist it turned out. This is going to be an every day bread in our house from now on tmrc_emoticons.)
