Ultimate Daily Bread - Wholemeal or Plain

  • 330 g water
  • 1.5 tsp dried instant yeast
  • 1.5 tsp white sugar
  • 500 g flour, wholemeal or plain
  • 1.5 tsp bread improver, optional
  • 1 tsp salt
  • 2 tbsp extra virgin olive oil

Recipe's preparation

  1. Combine water, yeast, sugar 3 min / 37C / speed 2
  2. Add all remaining ingredients 6 min /Dough mode
  3. Transfer to a floured or oiled bowl and cover with a cloth, and leave to proof for at least an hour until double in size in a draft free place.
  4. Transfer to floured bench or silicon mat and knead.
  5. Shape to fit loaf tin and transfer to tin lined with baking paper. Dust with flour (optional).
  6. Let stand for at least 30 mins till risen and pre-heat overn to 180 conventional mode.
  7. Bake for 45-50 mins until golden and clean if skewed.
  8. Once cooked, remove bread from tin, peel off baking paper and sit on a cooling rack. Cover with a dry cloth and leave to cool for at least 15 mins before cutting and serving. Enjoy!

Tip

I find baking paper easier to work with than oiling a tin as it comes away easy once the bread is cooked and doesn't cook the outside of the bread too much.
I prefer conventional mode cooking as it doesn't dry out the bread when compared to fan-forced.
I recommend not leaving the dough to proof in the TM bowl as it will rise more than the bowl capacity.
