All in one Strawberry and White Chocolate Cheesecake

Cheesecake Base

  • 80 grams Butter
  • 200 grams Plain Biscuits or Choc Ripple Biscuits

Cheesecake filling

  • 110 grams sugar
  • 200 grams white chocolate
  • 500 grams cream cheese
  • 130 grams thickened cream
  • 1 teaspoon Vanilla Essence/Extract
  • 200 grams Fresh strawberries, Diced
  • 250 grams Fresh strawberries, Sliced for top of cheesecake

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Base
  1. Lightly Grease Springform Pan.
  2. Melt Butter in thermomix bowl for 3 minutes, 50 degrees, speed 4.
  3. Add biscuits and blend on speed 8 for 10-15 seconds
  4. Press base into pan and refrigerate until required.
  5. Rinse and dry bowl.
  6. Cheesecake Filling
  7. Place sugar in thermomix bowl and mill speed 9 for 8 seconds. Set aside.
  8. Place White Chocolate in TM bowl and chop on speed 7 for 5 seconds. Then melt for for 4 minutes, 39 degrees, speed 2.
  9. Once chocolate is melted at add other ingredients to TM inlcuding sugar (excluding strawberries) and mix on speed 5 for 25 seconds. Scrape down sides and repeat again on speed 5 for another 25 seconds.
  10. When smooth add 200gm of chopped strawberries and combine with spatula.
  11. Pour filling onto base and smooth with spatula. Decorate top with remaining strawberries and refrigerate until set. This will only take a few hours, no need to leave it overnight.

Tip

Leave Cream Cheese and thickend cream in fridge until required. This will ensure cheesecake sets quickly.
