Anise scented poached feijoa

  • 12 feijoas, medium sze
  • 40 grams raw sugar
  • water
  • 2 star anise, whole

Recipe's preparation

    Anise scented poached feijoa
  1. Peel the feijoas, keeping them whole and no seeds showing. Slightly unripe feijoas are best as they have a bit more flavour and keep their shape better. Add the sugar, star anise and add enough water to cover the feijoas plus about 2 cm. This helps them to float a bit so they don't get too damaged while cooking. Poach at 80 degrees, reverse counter-clockwise operation, speed 1, for 25 minutes. Cool with the star anise in if you are going to serve chilled or as part of another dish, otherwise remove the star anise and serve warm with ice cream (liquorice ice cream would be good).
