Apple Crumble Cheesecake

Ingredients

Crumble (& Base)

  • 300 grams plain flour, (i use gluten free)
  • 1 teaspoon baking powder
  • 1 dash salt
  • 100 grams sugar
  • 100 grams Butter, softened
  • 1 egg
  • 70 grams dessicated coconut

Filling

  • Rind of 1 Lemon
  • 3 eggs
  • 100 grams sugar
  • 1 teaspoon vanilla essence
  • 500 grams cream cheese, (or ricotta cheese)
  • 30 grams polenta, (or semolina or flour)
  • 5 green apples, (or 2 pears and 3 apples)
  • juice of 1/2 orange, (or use tbls sugar)

Recipe's preparation

    Preparation
  1. Preheat oven to 175 degrees (160 fan forced).

     

    Grease and line springform tin (22-24cm).

     

    Peel and core apples and pears, and thinly slice.  Place into TM bowl with the orange juice.  Cook 9 minutes at 100 degrees on Reverse + soft speed. Put aside in colander to strain excess liquid. 

  2. Crumble (& Base)
  3. Place flour, baking powder and salt into TM bowl and mix for 10 seconds on speed 6.

     

    Add remaining crumble ingredients (except coconut) and mix for 5-10 seconds on speed 6 to make crumble.

     

    Transfer ½ of the mixture into pre-prepared tin and press down firmly and set aside in fridge.

     

    Add dessicated coconut to TM bowl.  Pulse/Turbo until coconut mixed through and crumble forms.  Place into separate bowl and set aside.

  4. Filling
  5. Dry bowl and place lemon rind in TM bowl and grate for 10 seconds on speed 8.

     

    Add eggs, sugar, vanilla and beat for 2 minutes on speed 4.

     

    Add cheese and polenta and mix for 30-40 seconds on speed 5-6.

     

    Layer the apples on top of the cheesecake base, place cheese mixture on top then finish off with the crumble mixture on top.

     

    Place into centre of pre-heated oven and bake for 45 minutes.

     

    Allow to cool completely before serving.

    I've been looking for apple crumble cheesecake since moving away from Brisbane. Thank you!

    I also chopped theapples in the thermi (why not Wink) and ended up using a mix of ricotta, cream cheese and sour cream. Would probably add lemon juice instead of vanilla into the filling, but other than that an excellent recipe!

    Tried this yesterday to take for dinner. Really nice, not too sweet. I would put a bit more crumble into the base next time. Cheated with Apple prep too - chopped quarters in the thermo.
