Apple & Ginger Cake Slice

Ingredients

12 slice(s)

Cake

  • 170 grams butter room temp
  • 150 grams brown sugar
  • 3 eggs
  • 180 grams Self Raising Flour
  • 1 teaspoon ground cinnamon
  • 1.5 teaspoons ground ginger
  • 1 zest of lemon
  • 3 Red Apples quartered

Topping

  • 1 red apple quartered & thinly sliced.
  • 1 tablespoon Demerara sugar or brown sugar

Recipe's preparation

    Cake
  1. Pre-heat the oven to 160 degrees


    Grease & line a slice tin


    Put quartered apples in the bowl. Speed 4/5secs set aside.


    Add butter & brown sugar to the bowl beat at speed6/10secs. Scrape down the sides add eggs then repeat one more time.


    Add flour, cinnamon, ginger, lemon zest & apples. counter-clockwise operationSpeed5/10secs or until mixture is combined.


    Pour mixture into prepared tin & smooth out with your spatula.


     

  2. Topping


    Lie the thinly sliced quarted apples over the top of the cake mix in any shape formation you wish. I usually just do two lines.


    Sprinkle with the Demerara or brown sugar. Works with Caster Sugar also.


    Cook in the oven for 25-30mins or until skewer comes out clean. Cool in pan.


    Lovely served warm on its own or with a bit of custard over the top.


    Freezes well too.

    Have been making this for three years now (first time I made it came up in my Facebook memories a few days ago). Still my absolute favourite Apple cake/slice recipe. Freezes super well, delicious warm with ice cream, or cold all on its own. A brilliant recipe when you need to take something for a crowd. Cooking it in a slice tray gives you about 2 dozen small-ish serves. Give it a go - you 100% will not regret it!

    Beautiful flavour, the hint of ginger is really nice. Only had two red apples, so had to use two green apples as well. Turned out amazing.

    I apologise I have added the instructions for the eggs, they went in after the sugar & butter was blended.

    not sure why it took longer in the oven. I'd you have a fan forced oven? Mine takes that long everytime.

    I just made this, smells devine, but I couldnt see in your recipe where the eggs needed to be added?Also it took about 15 minutes longer to cook for me.
