  • 130 grams almonds
  • 120 grams brown sugar
  • 120 grams Butter
  • 2 eggs
  • 3 ripe bananas
  • 150 grams self-raising flour

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipe's preparation

  1. Mill raw almonds on speed 8 / 10 seconds. Set aside in a separate bowl.
  2. Add butter and brown sugar. Cream on speed 5 / 20 seconds.
  3. Add eggs. Mix on speed 4 / 15 seconds. Check that mixture is thoroughly combined. Use spatula to remove any mixture from around the blades and repeat mixing on speed 4 / 15 seconds.
  4. Add ripe bananas and mix on speed 4 / 10 seconds.
  5. Add all remaining ingredients, including almond meal. Mix on speed 4 / 20 seconds. Scrape down sides and mix again on speed 4 for 20 seconds.
  6. Pour cake mixture into a greased loaf tin (muffin tin or whatever shaped tin you like).
  7. Bake at 160 degrees for 45-50 minutes. Ovens vary so check by inserting skewer or tooth pick into cake - it should come out clean.

Tip

    Thanks for posting my recipe Moira! It really is the best banana cake ever. Super moist & so full of flavour. My kids don't eat the bananas on purpose, hoping they'll go brown so I make another one. Delish with a dusting of icing sugar. Decadent smothered in cream cheese icing 🤤.
