Charlie's Green Tea Ice Cream

Ingredients

Custard base

  • 700 grams Full Cream Milk fresh
  • 4 egg yolks
  • 200 grams raw sugar
  • 2 level tbsp Green tea powder/matcha powder, Mixed with boiling water
  • 4 level tablespoon Boiling hot water, Mixed with Matcha

Whipped cream

  • 700 bunch cream

Recipe's preparation

    Custard base
  1. Add all ingredients in custard base to tm bowl and cook 8 minutes/80/speed 4.

  2. Put into a bowl and cool down over iced water until room temp.

  3. Whipped cream
  4. Whipp cream using butterfly until softly whipped

  5. Fold in cream into cooled custard base and then pour into container and put in freezer 4-6 hours. 

    Then bring out when partly frozen and put into tm bowl.

    30 seconds speed 9 until smooth.... re freeze for another 4-6 hours

Tip

At our fundraiser dinner we served green tea ice cream balls with Sam Berechee's Crumb -pistachios, freeze dried berries, lemon zest, sumac, salt & pepper. Drizzled with his raspberry & sake sauce!!

    Hmm, just read the label on the Daiso green tea. An 11 g sachet contains 10.6 g of sugar. Possibly not a very high concentration of tea, then! I've seen real matcha for sale in a Japanese shop, very expensive!

    I discovered you can get green tea powder at Daiso, so its $2.80 for 5 sachets. It's a blend of tea and sugar, which in this recipe should work fine. I'm trying it today!

    • 4 level tablespoon Boiling hot water, Mixed with Matcha( how much matcha?)

    Or did you mean, 2 tbsp green tea powder mixed with 4 tbsp of boiling hot water?

    Also, what's 700 bunch cream?
