  • 40grms Butter

cheesecake filling

  • 1 package Arnotts Mint Slice biscuits
  • 50grams sugar
  • 250gram Cream Cheese Block
  • 50grams Pouring Cream
  • 1 small pieces mint aero bar, crushed

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    cheesecake base
  1. 1. lightly grease 12 mini cheesecake moulds

    2.melt butter in tm for 2 mins, 50 degrees speed 3.

    3. add half a pack of choc ripple buiscuits blend speed 8 for 8 seconds or until buiscuits are complete blitzed 

    4.press buiscuit base into molds with hands leave in fridge while making filling.

  3. 1.place sugar in tm bowl and mill speed 10 for 7 seconds

    2.add packet of choc mint buiscuits and blitz speed 9 for 10 seconds

    3.scrape down bowl and repeat if necessary leaving no lumps

    4.add cream cheese and cream mix 20 seconds speed 5

    5.scrape down sides of bowl and repeat for another 20 seconds speed 5

    6.poor filling on top of biscuit base and smooth over on top

    7. crush up aero bar by hand or slowly in tm then use to decorate mini cheesecakes

    8.place in fridge for an hour or two until set and ready to eat.

Tip

if you double cream cheese and biscuit base this can also be turned into a cheescake insted of mini cheescakes

will keep for @5 days but tastes best while fresh same day or day after
