Chocolate Mousse

  • 1 can coconut cream, left in fridge overnight, only use top cream section
  • 1 tbsp powdered coconut sugar
  • 1 tsp cornflour
  • 2 eggs, seperated, room temperature
  • 35 g Cacao
  • 50 g coconut oil
  • 35 g Coconut Syrup
  • pinch Himalayan salt

Recipe's preparation

    Chocolate Mousse
  1. 1. Place cream into Thermomix bowl with butterfly attachment. Beat for 3 minutes / speed 3
    2. Add powdered coconut sugar and cornflour and beat for 1 minute / speed 4
    3. Empty cream into container and place in fridge. Clean Thermomix bowl
    4. Add egg yolks into Thermomix bowl with butterfly attachment. Beat for 2 minutes / speed 3 ½
    5. Add cacao powder, coconut oil and coconut syrup and beat for 1 minutes / speed 3
    6. Empty chocolate mixture into bowl. Thoroughly clean and dry Thermomix bowl.
    7. Add egg whites and salt into Thermomix bowl with butterfly attachment. Beat for 3 ½ minutes / speed 3 ½
    8. Add coconut cream mixture and chocolate mixture into Thermomix bowl (with Butterfly). Beat for 20 – 30 seconds / speed 3
    9. Remove Butterfly and mix for 20 – 30 seconds / speed 5.
    10. Pour into glasses / bowls and refrigerate for 4 - 6 hours before serving.
