CHOCOLATE PISTACHIO FUDGE TART (adapted from Giada De Laurentiis)

Ingredients

Crust:

  • 200 g raw pistachios
  • 3 tbsp sugar
  • 1/2 tsp sea salt
  • 6 plain digestive biscuits
  • 110 g unsalted butter, melted

Filling:

  • 370 g dark chocolate, chopped
  • 375 g thickened cream
  • 1 tsp vanilla extract
  • 1/8 tsp sea salt
  • 100 g dried apricots, chopped

To serve

  • whipped cream or double cream

Recipe's preparation

    CRUST
  1. Preheat oven to 170C. Spray a 9-inch springform pan with nonstick cooking spray and line the base with baking paper.

  2. Place the pistachios, sugar and salt in TMX bowl and turbo pulse 3-4 times to roughly chop.

  3. Add the digestive biscuits and turbo pulse again until finely chopped and incorporated. Add the melted butter and turbo pulse again until the mixture has the consistency of wet sand.

  4. Press the mixture evenly over the bottom of the springform pan and bake for about 10-12 minutes or until golden brown around the edges. Leave to cool to room temperature.

  5. Wash and dry TMX bowl.

  6. FILLING
  7. In TMX bowl, place the cream, vanilla and salt and heat 3 mins/50C/sp 3.

    Add in the chocolate and heat for 2-3 mins/37C/sp 3 or until completely smooth and incorporated.

  8. Pour the chocolate filling over the cooled crust and then refrigerate for 30 mins - 1 hour before sprinkling with the chopped apricots (so they don't sink to the bottom).

    Return to the fridge to set for at least 6 hours.

     

    Serve with whipped cream or dollop cream or even ice cream.

Tip

For the chocolate I used 200g of 70% Lindt and then made the rest up with 50% semi sweet chocolate.

I've only used pistachios as the nut for the base but I don't see why you couldn't use other nuts like hazelnuts for example.

This is a very rich, decadent tart - a small slice is plenty but hey who am I to judge tmrc_emoticons.)
