Coconut & Lime Custard

Ingredients

700 g

  • 1 lime, Zest only
  • 75 g Rapadura Sugar
  • 30 g Cornflour OR Coconut flour (if paleo)
  • 2 eggs
  • 400 g coconut milk, Canned or homemade/fresh
  • 100 g water

Recipe's preparation

  1. Place lime zest, sugar and flour into mixing bowl and mill 10 sec on speed 9. Scrape down side of bowl.

  2. Add all remaining ingredients and cook for 7 minutes at 90 degrees on speed 4.

  3. Once custard is cooked to your desired consistency, serve Immediately.

Tip

This is my take on the traditional TM custard but without the grain or dairy. Suitable for all on a paleo diet when coconut flour is used as the thickening agent.  Enjoy!!

    This tasted great, however my custard also split so it looked terrible & was very grainy.  I used the coconut flour version.  If I made something like this again, I would probably use gelatine as a thickener.  Keen to get a paleo custard in my repertoire.

    I made this today and it tasted good but unfortunately the custad split and it had a wierd texture...i am not sure wether it was the lime zest or the coconut milk that caused it to seperate ...,I am keen to try paleo versions of custard so your feed back would be much appreciated ..thanks

    i forgat to say that i used the coconut flour as well

    The lime needed more milling as the custard was gritty.  It has a light green colour, so its not a good looking dessert. but it was tasty.
