Chop walnuts, 5 SECS / SP 4. Set aside.
In a clean bowl, add warm water and yeast.
Stir, 5 SECS /SP2. Wait for approx 5 minutes until yeast has completely dissolved.
Add milk, flour, sugar, salt and olive oil,
Mix 90 SECS / SP 5.5
Transfer dough mix to your thermoserver or another big bowl, cover with cling wrap, and let dough rest in a WARM place for an hour to rise. Dont stir the dough before you spoon it out. Its full of air and very aerated and this is what helps make them fluffy at the end.
In a medium frypan, place enough vegetable oil or macadamia oil to deep fry the Loukamades. Heat oil to a high heat until it starts to bubbles. Test oil temp by placing a tiny bit of the dough in, if it sizzles, its ready !
Wet a tablespoon in a bowl of water, spoon out a spoon full of dough, and place it neatly into the oil.
Repeat the procedure, dipping your spoon each time you get a new ball of dough. Dont overfill pan, fry them in batches. Use a large slotted metal spoon/flipper and turn onto all sides untill golden brown.
When each batch is done, remove and place on paper towel to drain.
When all Loukoumades are done, drizzle with heated honey ( I warmed mine in microwave, just quicker and easier ), and sprinkle with cinnamon and chopped nuts.
