Creamy Leche Flan

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Caramel Glazing
  1. Place 15 grams white sugar in each llanera and cook over medium heat until it is completely melted and becomes a golden-brown caramel. When melting it would be ideal to swirl the ilanera to avoid burning and to distribute the caramel evenly. Set aside for the ilanera for caramel to set and let it cool down.
  2. Flan
  3. Place the remaining ingredients (fresh milk, condensed milk, eggs, vanilla extract, lemon juice) into mixing bowl and mix for 1 minute / speed 2, until desired creamy consistency is achieved.

    Using a nut milk bag, strain the mixture into a large bowl and repeat the process to remove any lumps.

    Rinse the TM bowl, place the1.5 litres of water into mixing bowl and place the lid and Varoma with lid into position. Set TM 40 mins / Varoma / speed 3.

    Pour the flan mixture to the two llanera moulds, leaving a 1cm gap from the top of the mould.

    Cover the ilanera with aluminium foil and tighten with a rubber band.

    Place the two llanera moulds into the Varoma dish, cover and place on top of the TM bowl and cook 30 to 40mins / Varoma / speed.

    Remove the ilanera moulds from the Varoma dish and set aside to cool down.

    Run a thin knife around the edges of the mould to loosen the leche flan.

    Place a plate on top of the llanera and quickly turn upside down to position.

    Lift the llanera and pour the remaining caramel glaze from the mould (optional).

    Place the cooked leche flan in the fridge to firm. Best to serve when it’s chilled.

Ilanera is a thin metal / aluminium oval moulder which you can get from Filipino shops. Here in Australia, you can probably get them in Asian groceries. Picture link is for illustration purposes only https://www.amazon.co.uk/Large-Leche-Flan-Molder-Llanera/dp/B07BQDRNRL

For caramel glazing once melted, the sugar hardens very quickly so it would just be best to get it over and done with on the stove.

When steaming, cover the ilanera with foil so that moist / water do not get into your flan.

To know when the leche flan is cooked, the flan should be firm to touch.

You can store the creamy leche flan in the refrigerator for up to 1 weeks in a container.

    Wanting to try this but recipe missing a few things. How much corn flour? Also, the 40 minute step - is something meant to be cooking or just steaming nothing for 40 minutes? Thanks!
